Cacao is native to Central America and was used medicinally by the Olmecs at least 3500 years ago.  Cacao is rich in magnesium, calcium, iron, zinc, copper, manganese and potassium. It is a good source of vitamins A, B1, B2, B3, C, E, and pantothenic acid and is one of the best sources of antioxidants.

Ingredients:

  • 1 avocado
  • 1 banana
  • 3 tablespoons cacao powder
  • coconut cream to preferred texture
  • pinch salt
  • one or two drops mint oil (optional)

Note – a traditional mousse would use egg whites instead of coconut cream.

Directions:

Using a food processor (or blender)

  1. whip avocado, banana and salt
  2. blend in cacao
  3. add coconut cream to preferred texture
  4. place in a wine glass and refrigerate for a few hours

Presentation:

-Top with a dollop of chilled coconut cream, sliced cherries (or your favourite berries) and a mint leaf to max out the flavour and nutritional profile.

Avocado: an excellent source of mono and polyunsaturated fats, vitamin C, vitamin B6, potassium and fiber.

Banana: an excellent source of vitamin B6, vitamin C, potassium and fiber.

Cacao: an excellent source of magnesium, iron, potassium, fiber, protein, complex carbs, fatty acids and antioxidant polyphenols.

Coconut Cream: an excellent source of manganese, lauric acid, capric acid and medium chain fatty acids.
